They'll stop people from making stupid mistakes on a lark, so if you're likely to send admissions a lock of your hair or whatever, a Spivey consultant will add value by telling you "jfc no, why would you do that?"

They are generally likely to be good writers (based on their background and credentials) so if your personal statement is insipid, they'll add value by telling you "this sucks, it would be more interesting if I learned more about XYZ." A good pre-law advisor or a friend with a writing background can replicate 95% of this.
