Ooh good question! There are vegan kimchi recipes out there! I tried one but couldn't remember the exact recipe but it tasted pretty close to the one with the shellfish! :)

cuz my allergy is pretty severe but i can still eat stuff with fish sauce/oyster sauce/kimchi but everyone is different

Also there are vegans and vegetarians in Korea, especially the Buddhist Koreans. They eat kimchi without shellfish. I personally also prefer it without shellfish since it tastes a bit more "fresh" without the fishy

I LOVE Thai food but I have to tell them no oyster sauce or fish sauce (based on experience and one too many hospital trips). I also have to make sure they have a separate shellfish-free prep station
